Warms My Soul...


"Yummy to my tummy" is what Delanie says when I make Chicken Potato Soup. We had it last night so I thought you might want the recipe so it can warm your soul! This recipe came from my mother-in-law (Mel). She has been making it since Kyle was little so I have taken on the duty of making it on cold winter days. I made a double batch and can't wait to eat it for lunch today. Kyle and I were saying last night that we think it would also be good using clams for Clam Chowder. The kids suggested shrimp but that just doesn't sound to tasty to me.


Chicken Potato Soup


  • 4 cups diced potatoes

  • 4 tbsp vegetable oil

  • 1 med onion diced

  • 1 1/2 cup cubed cooked chicken

  • 2 tsp salt

  • 1 cup chicken broth

  • 1 12 oz Pet milk

Cook onion in oil until translucent. Add potatoes to pan & stir to coat with oil. Add other ingredients except for the milk. Bring to a boil then lower heat & cover. Simmer until potatoes are tender (about 30 minutes). Add Pet milk and serve hot. Some times we top it with shredded cheese.


(Cooking chicken- I usually boil a chicken then de-bone and use the broth from it for the soup or I cook chicken in crock pot and use that broth for the soup.)
